What are Utah’s food safety regulations?

If you’re a permit holder, or person in charge, at a food service establishment, Utah Food Service Sanitation Rule 2-102.12 states that you must have at least one employee with supervisory or management responsibility on-premises that’s a Certified Food Protection Manager. 

Additionally, the Utah’s Food Safety Manager Certification Act states that once you’ve completed an approved program to get your food manager certification, you must submit documentation to your local health department that indicates you passed the exam. 

The Utah Department of Health lists approved programs for certification, which includes the ANSI-CFP accredited program we offer at Learn2Serve by 360training.

Make sure you keep your certification on hand at your establishment because you must be able to show it to any local health officer when they request it.

How long is the food manager certification good for? 

The Utah Act states that you must renew your food manager certification every three years. To renew, you need to pass the Food Protection Manager certification exam again.

Who should get their food manager certification in Utah? 

The Utah rule doesn’t specify by job title who at the establishment needs to be certified. It does, however, state that the person must have the authority and responsibility to direct and control food preparation. 

So most of the time that ends up being the owner, operations manager, general manager, or executive chef. But anyone who is responsible for preventing foodborne illness can get their food manager certification

According to data from the Center for Science in the Public Interest, over a 10-year period (2003-2012), there were a total of 44 foodborne illness outbreaks. And the two most common pathogens found were Campylobacter and Salmonella —both preventable with the right food safety protocols in place. 

Preventing foodborne illness is something everyone at your restaurant is responsible for—but it’s especially important for food safety managers because it impacts so many areas of their jobs. For instance, they are in charge of:

  • Managing the food safety program through HACCP education and awareness 
  • Keeping all food, from frozen to fresh, at the right temperature  
  • Educating employees on food safety protocols, policies, and procedures 

Since they typically have more responsibilities, food managers can make more money than servers and other food employees. According to wage data from the Bureau of Labor Statistics, here is the average amount of money you can expect to make in senior management positions in the Utah foodservice industry:
