What are the Maine food safety regulations? 

Under Maine Food Code § 2-102.12, food establishments need at least one employee with supervisory and management responsibility needs to become a Certified Food Protection Manager (CFPM). Certain low-risk businesses are exempt from the requirement. 

To become a CFPM, you need to pass an ANSI-accredited exam that is approved by Maine's Department of Health and Human Services (MDHHS), like the one offered by Learn2Serve by 360training. 

A copy of your CFPM certificate needs to be submitted to either your district health inspector or MDHHS's Health Inspection Program. Your employer will probably also want a copy on file 

The CFPM doesn't need to be on-premises at all times, but they are responsible for educating each person in charge (PIC) when they are off-shift so that each PIC is capable of demonstrating food safety knowledge to an inspector.  

One way for PIC to demonstrate this knowledge is for each PIC to hold their own food protection manager certificate, and the MDHHS sometimes requires this if an establishment fails an inspection.

How long is the food manager certification good for? 

Maine requires CFPM certification to be renewed within five years of the issue date. Before that time is up, you'll need to re-take the Certified Food Protection Manager exam and submit a copy of your new certificate to the state or district health authority.

Who should get their food manager certification? 

Maine requires the CFPM to be someone with "supervisory and management responsibility" and the authority to "implement food protection measures" and "direct and control food preparation and service." For most businesses, that's an owner or upper-level manager.  

To ensure that the person in charge of every shift is able to pass the knowledge demonstration part of an inspection, many business owners require all PIC to earn their food protection certificate as well.  That includes shift managers, department managers, head chefs, and other leaders. 

What does a food manager do and how can they improve food safety? 

Food service and retail managers have obligations in many areas, ranging from customer service to operations to human resources and team management. 

But they're also responsible for ensuring food safety is taken seriously in their establishment. That involves: 

  • Knowing local food safety regulations inside and out  
  • Creating policies and protocols to ensure their establishment's compliance 
  • Training their employees in food safety protocols and principles  
  • Monitoring the way food safety procedures are executed and correcting errors 
  • Holding food suppliers responsible for meeting acceptable food safety standards

According to wage data from the Bureau of Labor Statistics, here is the average amount of money you can expect to make in senior management positions in the Maine food service industry:
