What Is Food Safety?

Food safety is a set of standard practices in promoting the health and safety of food handling, storage and consumption. These practices are guided by the established researches of the Center for Disease Control Prevention (CDC), state health departments and related international safety and health organizations.

Every year, tens of thousands of foodborne illness incidences are reported to the CDC. The CDC estimates that 1 in 6 Americans annually are afflicted with a foodborne illness, which equates to 48 million people in general. Out of this statistic, 128,000 are hospitalized and 3000 die of foodborne illnesses.

To prevent the spread of foodborne illnesses, food safety measures are applied by various types of food safety establishments from restaurants to commissaries and warehouses. Workers from these types of establishment follow a streamlined guideline of acquiring, sanitizing, preparing and preserving food to prevent the spread of pathogens in it, These general safety practices can also be applied at home.

But marrying the relationship between food safety and hygiene or food safety and sanitation doesn’t just depend on following a string of rules. It involves continuous research on safety and healthfulness, inspection of workplaces and documentation of all processes that will improve on existing food safety practices.

Through the Food Safety Modernization Act of 2010 or H.R. 2751 (which was signed into law by President Obama in 2011), the US Food Development Authority and other stakeholders can efficiently undertake these tasks by issuing guidelines, reports, public notices, safety strategies and related tasks. The act essentially shifted the focus from responding to the spread of foodborne illnesses to preventing contamination, right from food facilities or their places of growth and cultivation.

Your food safety license will be valid based on your jurisdiction. Some locales require individuals to renew their licenses in five years, others in three years. If you got licensed in a state where the licensing period is five years and moved to a state where it’s three years, your license validity will be cut short to three years.
