What are the Nebraska food safety regulations?

Nebraska Food Code requires that, during all hours of operation, a person in charge (PIC) is present who can demonstrate knowledge of foodborne disease prevention, HACCP principles, and Nebraska Food Code requirements.

One way to satisfy this portion of an inspection is for the PIC to be a Certified Food Protection Manager (CFPM) who has passed an exam with an ANSI-accredited training program like Learn2Serve by 360training. So while the state doesn't mandate certification, getting certified does remove one x-factor from your health department inspection.

The Lincoln-Lancaster County Health Department (LLCHD), on the other hand, requires at least one PIC with a county-issued Food Protection Manager permit for each establishment. Once you receive certification from an LLCHD-approved and ANSI-accredited program, you have to apply for a permit with LLCHD along with a fee.

Please note, Learn2Serve by 360training is NOT accepted by LLCHD at this time.

Other jurisdictions in Nebraska may have their own requirements. We always recommend checking with your local health department.

How long is the food manager certification good for?

Lincoln-Lancaster County requires renewal every three years.

The Nebraska Food Code doesn't specify a renewal period, but ANSI's CFPM certification is generally valid for a maximum of five years.

Be sure to check your local regulations and employer policies.

Who should get their food manager certification?

Nebraska regulations don't stipulate exactly who needs certification. However, in most cases it’s the owners, executive chefs, and managers who need to earn their food manager certification.

Many restaurants and other retail food establishments require certification for all their chefs and managers, to cover their bases.

What does a food manager do and how can they improve food safety?

Food managers juggle a lot of responsibilities, from ensuring quality customer service to coordinating operations to handling human resources and team management.

Their food safety obligations are also broad. Food managers need to:

  • Know local food safety regulations and ensure their business's compliance
  • Create and enforce policies to minimize food safety hazards
  • Train employees in food safety protocols
  • Monitor the way food safety protocols are executed and correct errors
  • Confirm that all food vendors and deliveries meet safety standards
  • And more

Due to the level of accountability, food managers earn a significantly higher salary than servers and other food employees. According to wage data from the Bureau of Labor Statistics, here is the average amount of money you can expect to make in senior management positions in the Nebraska foodservice industry:

Job Title  Average Hourly Wage  Average Yearly Wage
Food Service Manager  $22.22  $46,220
Chef  $21.24  $44,180

Nebraska-approved food safety manager certification is an important qualification for getting one of these jobs.

Why are food managers in Nebraska required to get ANSI certification?

Foodborne illness is a risk that every state should take seriously, including Nebraska. According to data from the Center for Science in the Public Interest, over a 10-year period (2003-2012), there were a total of 13 foodborne illness outbreaks. And the most common pathogen found was E. coli, which is preventable with the right food safety protocols in place.

As the hub of food safety policy, managers are in the best position to protect customers and employees from foodborne illness. Earning ANSI-accredited CFPM certification is a good way to ensure they're qualified for the task.

These programs meet the highest standards in food safety. That's why the ANSI CFPM program has been endorsed by the Centers for Disease Control and Prevention (CDC) and the Food and Drug Administration (FDA).
