What are the New Hampshire food safety regulations? 

According to the New Hampshire Food Code, a Certified Food Protection Manager (CFPM) needs to be present at a food establishment during hours of operation where food is being prepared. A list of facilities that are exempt to the rule can be found under He-P 2303.02(a). 

To become a food protection manager, you'll need to pass an ANSI-CFP-accredited food safety, like Learn2Serve by 360training.

Many New Hampshire food establishments are under the regulatory authority of NH DHHS, but there are over a dozen self-inspecting cities or towns in New Hampshire who pass and enforce their own food safety laws independent of the state. They each have their own independent regulations. 

While our training is accepted by NH DHHS, it may or may not be accepted by different self-regulating communities. Anyone operating in one of these municipalities needs to consult with their local health authority about their CFPM requirements and accepted training providers. That includes:

How long is the food manager certification good for? 

NH DHHS doesn't specify out an expiration period, but ANSI's CFPM certification is generally valid for a maximum of five years. 

Self-inspecting municipalities may have specific renewal requirements.

Who should get their food manager certification? 

New Hampshire only says it needs to be a "person in charge," which it defines as the person present at the time of inspection who's responsible for the establishment's operation, including the duties described in § 2-103.11 of the 2017 FDA Food Code. 

Generally, this will mean the owner/operator, a manager, or a head chef. Since the state food code requires a CFPM to be on duty during all hours where food is being prepared, large businesses and/or those with extended hours will probably require certification for department managers or shift managers, as well. 

Self-inspecting communities may vary. 

What does a food manager do and how can they improve food safety? 

Food managers control many different areas of a business, including operations, customer service, team management, and human resources. 

Their food safety responsibilities are integrated into all parts of their job. That includes: 

  • Knowing applicable food regulations and securing their business's compliance 
  • Designing appropriate policies and protocols to minimize food safety hazards 
  • Training employees in food safety and ensuring they execute protocols properly 
  • Monitoring the way food safety protocols are executed and correct errors 
  • Maintaining accurate records of food safety data  
  • Confirming that food sources and their deliveries meet safety standards  
  • And more 

Due to the level of accountability, food managers earn a significantly higher salary than servers and other food employees. According to wage data from the Bureau of Labor Statistics, here is the average amount of money you can expect to make in senior management positions in the New Hampshire foodservice industry:

Foodborne illness is a concern that every state should take seriously, including New Hampshire.
