What are Oregon food safety regulations?

The Oregon Food Sanitation Rules require food handler training for all employees, but they require a Person in Charge to be capable of demonstrating advanced knowledge of food safety, foodborne illness, HACCP, and other concepts that aren't covered in basic food handler training.

So while food manager certification is only recommended in Oregon, not required, getting certified is highly beneficial. Becoming a Certified Food Protection Manager is an acceptable substitute for a Food Handler's Card.

It's also accepted as your Demonstration of Knowledge during inspections, so there's one less thing to worry about. The other acceptable demonstrations of knowledge are either having zero "priority" violations or answering all of an inspector's questions correctly. Unlike those methods, certification is a sure thing.

The state of Oregon provides a list of acceptable training providers for CFPM accreditation, which includes Learn2Serve by 360training.

We always recommend checking with your local health department for any additional certification and training requirements.

How long is the food manager certification good for?

Oregon doesn't specify out an expiration period, but ANSI's CFPM certification is generally valid for a maximum of five years.

It's always best to double-check with your local health authority and/or employer for their requirements.

Can you take the Oregon food manager exam online?

Yes, your exam will be administered through our online proctor service. The Learn2Serve Food Protection Manager Certification Exam is accredited by the American National Standards Institute and the Conference for Food Protection (ANSI-CFP).

Who should get their food manager certification?

For most businesses, it's at least one owner, manager, or chef.  Some employers will mandate certification for all of their managers, chefs, and shift or department leads.

What does a food manager do and how can they improve food safety?

Food managers control many different areas of a business, ensuring the quality of customer service, coordinating operations, managing their team, and handling human resources.

But their food safety obligations touch nearly every part of the job. Food managers need to:

  • Understand local food safety regulations and keep their business in compliance with the law
  • Design suitable policies and protocols to minimize food safety hazards
  • Maintain records of a valid food worker card for each employee
  • Conduct frequent self-inspections to ensure food safety
  • Confirm that all food suppliers and deliveries meet food safety standards
  • And more

Due to the level of accountability, food managers earn a significantly higher salary than servers and other food employees. According to wage data from the Bureau of Labor Statistics, here is the average amount of money you can expect to make in senior management positions in the Oregon foodservice industry:

Job Title  Average Hourly Wage  Average Yearly Wage
Food Service Manager  $25.05  $52,110
Chef  $22.50  $46,790

Oregon-approved food safety manager certification is an important qualification for getting one of these jobs.

Why are food managers in Oregon required to get ANSI certification?

Foodborne illness is a real danger in every state, including Oregon. According to data from the Center for Science in the Public Interest, over a 10-year period (2003-2012), there were a total of 310 foodborne illness outbreaks. And the two most common pathogens found were Norovirus and Salmonella—both preventable with the right food safety protocols in place.

As the hub of food safety policy, managers are in the best position to protect customers and employees from foodborne illness. Earning respected food safety certification is a good way to ensure they're qualified for the task.

ANSI-accredited certification programs meet the highest standards in food safety That's why the ANSI CFPM program has a stamp of approval from the Center for Disease Control and Prevention (CDC) and the Food and Drug Administration (FDA).
