1. Define food safety and its goals, benefits, impact, proper adherence, critical control points, and recall requirements.
2. Recall biohazards, symptoms and causes of common foodborne illnesses, identify spoilage signs and causes.
3. Identify three types of contamination, explain how food becomes hazardous, and recognize how to preserve food.
4. Understand time, temperature, and control with relation to food handling and how to properly take the temperature of food and maintain the temperature while storing food.

What is a ANSI Food Handler Certificate?

If you handle unpackaged food, food equipment or utensils, or food contact surfaces, you must take food handler training approved by the Texas Department of Health or accredited by the American National Standards Institute (ANSI). This includes kitchen staff, bussers, hostesses, servers, bartenders, and bar-backs.

It is the employee’s responsibility to acquire and complete the required training and obtain certification.

How Can You Get ANSI Food Handler Certificate?

To get certified, enroll in an approved food handler course. You must complete the training and pass the exam with a score of 70% or higher. After completion, print your card and give it to your employer to keep on file. Present your completion certificate to your local health authority and pay any required registration fees.

Further requirements, renewal periods, and associated health department fees could vary depending on county/city. Check with your local governing health department to obtain this information.
